Cooking time 35-30 min
180g chicken breast strips
2 tablespoons spice rub (I used Woolies Moroccan spice rub but any mix of your favourite dried spices will do)
Portabello mushrooms (1 or 2)
1/2 an avocado
1 medium tomato (chopped)
salt and pepper to taste
2 teaspoons lemon juice.
Preheat an oven to 220 degrees Celsius and put the Mushrooms on a foil lined baking tray. Put into the oven for 10 minutes. Rub the chicken with the spices and add to the baking tray after 10 minutes. Switch the oven onto the grill setting and turn the mushrooms before putting it all back into the oven. Leave for 10-15 minutes or until chicken is cooked through. Whilst the chicken is cooking prepare the guacamole by mashing the avo with the lemon juice, salt and pepper. Mix in the chopped tomato.
When cooked, remove the baking tray from the oven and assemble your ‘stack’ starting with one mushroom, chicken, avo, more chicken, avo AND another mushroom on top if desired.
